Many nationalities have ethnic dishes with origins from ancient times when survival was paramount and desperate times required desperate measures. But in a time when survival is no longer as critical, one has to wonder why the tradition continues. The Koreans have kimchee, a very spicy fermented cabbage, while the Mexicans have menudo, a soup made of beef stomach. The Scots have haggis, a pudding of sheep's heart, lungs, and liver encased in the animal's stomach lining. Our Filipino renters had a fish recipe that left a pungent odor throughout the house.
